Peachy Ham, Swiss and Brie Pull-apart Sliders

So very easy to make, Peachy Ham, Swiss and Brie Sliders are packed with flavor with the addition of fresh ripe peaches, honey Dijon mustard and hot pepper jelly. Neatly layered together in soft dinner rolls, bathed in butter, topped with dill, and then baked to golden perfection. Salty and sweet, these will be a hit with your guests!

There is nothing standard about this twist on "ham and cheese"; they were inspired by two of my lunch-time favorites – one was the ham, brie and honey-mustard ficelle that I used to indulge in at Gentile’s Market on Manhattan’s Upper East Side. The other was another lunchtime favorite grabbed around the corner from my office in Connecticut, where similar ingredients were wrapped in a tortilla and grilled. And then served with a side of horseradish ranch dressing. Boom! (This was one of Debi’s favorites!)

While there is nothing like a fresh peach, in a pinch, canned can be used – just make sure to slice them a bit thinner. You can also use other stone fruits like nectarines or plums! I love the combination of the salty ham, gooey cheese, sharp mustard and sweet peaches – with a kick of heat from the pepper jelly.

Speaking of Peaches....

... I only recently learned the difference between a “cling” peach and a “freestone” peach – when trying to pry the pit out of the peach without destroying the flesh. (I failed miserably and was off researching “why”?)

Freestone peaches allow the pit to be removed easily from the flesh. Whereas, cling peaches – well, they do exactly that – the peach flesh clings to the pit.

Ingredients

  • dinner rolls
  • honey mustard (My favorite brand is Honeycup)
  • sliced Swiss cheese
  • deli sliced Black Forest Ham
  • Brie cheese
  • fresh peaches
  • pepper jelly
  • butter
  • Worcestershire sauce
  • sea salt
  • fresh or dried dill

Instructions

Place the bottom half of the dinner rolls on a baking sheet lined with parchment paper. Spread honey mustard over the bottom half of the rolls. 

Follow with a layer of Swiss cheese.

Then follow with a generous layer of ham

Arrange peach slices evenly over the top of the ham. 

Evenly top with 12 pieces of sliced brie. 

Spread the cut side of the top of the rolls with pepper jelly.

Place top back on top of the bottom half, gently pressing down.

In a microwave safe bowl, melt the butter with the Worcestershire sauce. Whisk together and pour evenly over the top of the rolls, brushing to distribute. Sprinkle with sea salt.

Cover the baking sheet with foil and bake for 10 minutes. Remove the foil and continue baking for 12 minutes until the cheese has melted and the top is golden.

Sprinkle with dill and sea salt.

Slice the roles and serve warm.

Hint: After you place the ham sliders in the oven, and remove the foil, make sure you keep close watch to make sure they don't miss the "golden brown" window!

If you don't have honey dijon mustard on hand, it is easy to make. In a small bowl, whisk together 2-½ tablespoons dijon mustard with 2 teaspoons honey and a ½ teaspoon of white or cider vinegar.

Substitutions & Variations

  • Peaches - fresh ripe peaches are optimal, but not always available. In a pinch, use unsweetened drained canned sliced peaches; they will need to be sliced thinner than they come in the can but will work just fine
  • Ham - I used Black Forest Ham because it isn't cloying in sweetness, but most deli hams will work. Turkey will work too!
  • Swiss Cheese - use sliced Havarti, gruyere or fontina. (Feel free to use shredded cheese.)
  • Make it Spicy - if the pepper jelly doesn't give it enough kick, whisk a teaspoon of horseradish into the honey mustard

Storage

These are best served immediately. For leftovers, I wrap the Peachy Ham, Swiss and Brie Sliders loosely in aluminum foil and refrigerate -- up to 3 days. Simply take the foil packet out of the fridge and place in the oven set to 250°F and warm for 20 minutes.

Ingredients
  

  • 12- oz package of 12 dinner rolls cut in half horizontally
  • 2 to 3 tablespoons honey dijon mustard*
  • 6 slices Swiss cheese about 3 ounces
  • 12 oz. thinly sliced Black Forest Ham
  • 3 ounces Brie sliced and cut into 12 pieces (1" square)
  • 3 fresh peaches (medium) pitted and sliced
  • 3 tablespoons pepper jelly
  • 5 tablespoons butter
  • 1 teaspoon Worcestershire sauce
  • Sea salt
  • 2 teaspoons fresh dill or ½ teaspoon dried

Instructions
 

  • Place the bottom half of the dinner rolls on a baking sheet lined with parchment paper.
  • Spread honey mustard over the bottom half of the rolls. Follow with a layer of Swiss cheese, a layer of ham. Arrange peach slices evenly over the top of the ham. Top evenly with 12 pieces of sliced brie.
    Spread the cut side of the top of the rolls with pepper jelly and place back on top of the bottom half, gently pressing down.
  • In a microwave safe bowl, melt the butter with Worcestershire sauce. Whisk together and pour evenly over the top of the rolls, brushing to distribute. Sprinkle with sea salt
  • Cover the baking sheet with foil and bake for 15 minutes. Remove the foil and continue baking for 5- 7 minutes until the cheese has melted and the top is golden. Sprinkle with dill.
  • Slice the roles and serve warm.

Notes
