Champagne Dijon Vinaigrette

Easy to prepare using pantry staples, this simple champagne vinaigrette will become a staple salad dressing in your kitchen repertoire. Champagne vinegar, dijon mustard, garlic and olive oil are whisked together and will shine on salads, vegetables or as a marinade.

My marketing career found myself immersed in salad dressings while working for the "Salad King" himself, Paul Newman. It was there that I learned how simple it is to create a dressing. (Newman's Own salad dressings continue to be my "go-to" for convenience and quality.)

I whipped up this Champagne Dijon Dressing to use as a dressing and a marinade in my Arugula, Strawberry and Quinoa Salad with Rosemary Steak Tip Kebabs.

Ingredients

Champagne Dijon Vinaigrette Ingredient
  • champagne vinegar (substitute white wine vinegar)
  • Dijon mustard
  • garlic clove
  • Kosher salt
  • freshly ground black pepper
  • good quality olive oil

Instructions

Whisk together the first five ingredients

In a small bowl, whisk together mustard, garlic, vinegar, salt and pepper. 

whisk in the olive oil

Continue to whisk while slowly adding the olive oil until combined and vinaigrette is emulsified.

Hint: Make sure to use a "good" extra virgin olive oil in this recipe. Extra virgin retains more of the original flavor from the cold press process -- this process is also what gives it its extra virgin status.

Variations

  • Citrus - Add a squeeze of lemon or orange -- or a teaspoon of zest to the champagne vinaigrette.
  • Shallots - Mince 1 to 2 tablespoons of shallot and add to the dressing instead of the garlic
  • Herbs - Thyme, Tarragon or Rosemary would be lovely additions to the dressing. Mince a teaspoon or two and whisk it in.
  • Extra creamy - whisk in a fresh egg yolk to make the dressing extra creamy

Storage

The USDA recommends that homemade dressings be refrigerated and consumed within 4 days.

  • ¼ cup champagne vinegar substitute white wine vinegar
  • 1-½ teaspoon Dijon mustard
  • 1 large clove garlic, minced
  • 1 teaspoon Kosher salt
  • ½ teaspoon freshly ground black pepper
  • ¾ cup good olive oil

  • In a small bowl, whisk together mustard, garlic, vinegar, salt and pepper. Continue to whisk while slowly adding the olive oil until combined and vinaigrette is emulsified.
