Major Grey's Mango Chutney and curry, as well as dried fruit and nuts turn traditional chicken salad into a pleasant, flavorful and unexpected experience. Serve it on a sandwich, on a bed of lettuce, in a pita or for high tea -- in a crustless tea sandwich. Or even on a cracker for a midday snack.
4-5cupsshredded or diced roast chickenfrom one small rotisserie chicken
¾cupdiced celery
¾cupchopped cashews
4green onionsthinly sliced, white and green parts
1tablespoonminced fresh cilantro
½teaspoonsalt
Dressing
1cupmayonnaise
⅓cupMajor Grey’s Mango Chutneyminced
¼cupdry white wine
1tsp.curry powderor to taste
Instructions
To plump the raisins, place raisins in a small microwave safe bowl. Cover them with about 2 tablespoons of water, microwave for 45 seconds and let them stand for a few minutes.*
Add the raisins to a medium bowl, along with the chicken, celery, cashews, green onions and cilantro and toss together..
In a small bowl whisk together dressing ingredients.
Gently fold the dressing mixture into the chicken mixture.
Notes
*If a microwave is not available. Simply allow the raisins in water to stand at room temperature for 30 minutes.
